Ingredients of Coconut-Lime Granita
- You need 1/2 cup of sugar.
- It's 1 can of (13 1/2 Oz) coconut milk.
- It's 1 of Zest of one lime.
- It's 1 of Juice of half of lime.
- You need 2 tbsp of Shredded Coconut (fresh or unsweetened).
- It's 1 of Course Sea Salt.
Coconut-Lime Granita step by step
- place an 8 inch square baking dish in freezer to chill while preparing the simple syrup.
- Combine sugar and 1/2 cup water in a small sauce pan over low heat until the sugar is dissolved. Remove from heat and allow to cool.
- Pull the chilled baking dish out of freezer and pour coconut milk into dish. Whisk to smooth any lumps.
- Whisk in simple syrup, lime zest, lime juice and fresh coconut until well combined.
- place dish in freezer for one hour.
- Pull out of freezer every hour and break up the ice crystals using a fork, that is forming strong the edges of dish. Return to freezer. This whole process should take about 3 hours..
- when ready to serve, allow Granita to sit at room temp for about 5 minutes so it softens. Spoon mixture into bowl and top with a little course sea salt.
