  1. Put all of the patty ingredients into a bowl and mix together - I use my hands as I can break down the beef and make sure the flavors evenly combined.
  2. Divide the mixture into 8 even sections.
  3. Working with one section at a time, split it in 2 and on a wet surface (to keep the patties moist and moving freely), with wet hands press the 2 halves into thin patties about 3 inches in diameter.
  4. Take a slice of cheese and fold in half, then in half again so you have a small square and place in the centre of one of the patties.
  5. Cover with the other patty and work the edges together, shaping and sealing and ensuring that no cheese is showing.

  11. Slice buns, add patties fried onions and a spoonful of sauce - enjoy - snack sized patties for 8 or dinner for 4.
