Berry Ice Cream. The wild blueberries on our property spark recipe ideas. When my daughter and I made this ice cream at a Girl Guide meeting, it was well received. Homemade ice cream is a real treat.

This Berry Ice Cream is one of the easiest ice cream recipes. It's not a heavier custard based ice cream, so there's no tricky egg work involved. Whole milk and cream give this ice cream its lightly creamy texture. You can cook Berry Ice Cream using 4 ingredients and 9 steps. Here is how you achieve it.

Ingredients of Berry Ice Cream

  1. You need 1 of Mixed berries.
  2. It's 1 cup of superfine sugar.
  3. It's 3/4 cup of heavy cream.
  4. It's 1 of to 3 tbsp confection's sugar.

A generous heap of berries lend their beautiful color and flavor. This blueberry ice cream is rich, creamy, and delicious. Serve this ice cream at a summer gathering or special occasion. This would be wonderful with lemon pound cake or with a fresh blueberry sauce or mixed fresh berry topping.

Berry Ice Cream instructions

  1. Wash your fruits, pick out any bits of stalk, and hull the strawberries. Put fruit and sugar in a pan, cover, and cook slowly for 5 to 10 min..
  2. When the berries let out their juice, turn up the heat and simmer for 5 minutes..
  3. Let the fruit cool, then blend it until it's smooth..
  4. Pour the blend fruit though a srainer to remove the seeds..
  5. Pour the strained fruit into ice cube trays and freeze until solid..
  6. Put the cream in a bowl and whip it till it forms soft peaks when you lift the wisk..
  7. Let the frozen berries thaw for 5 minutes, the roughly chop in a food processor..
  8. Add the cream. Whizz to combie. Add confectioner's sugar for taste..
  9. Serve now ( it is very soft), or freeze for an hour befor serving.

I adapted this from a strawberry ice cream recipe that came with my machine. Perfect with fresh blueberries but good with frozen as well. This blueberry ice cream will add a sweet ending to any meal. It's best to make the base and chill it overnight before processing in your ice cream maker. Serve topped with fresh strawberries or raspberries.
