Mrs. Beacham's Blueberry Pie. Smith blueberry pie is not my favorite frozen pie! When I baked the pie the blueberry filling completely soaked through the crust. Leaving the crust, especially the bottom crust, a mushy gooey mess!
So of course a Blueberry Pie sounded wonderful to me. I looked over the ingredients and decided to give this recipe a try. I had to use frozen Bluberries instead of fresh because fresh are WAY to EXPENSIVE right now. You can cook Mrs. Beacham's Blueberry Pie using 7 ingredients and 9 steps. Here is how you achieve it.
Ingredients of Mrs. Beacham's Blueberry Pie
- You need 4 cup of blueberries.
- You need 1 tbsp of lemon juice.
- It's 1 cup of sugar.
- You need 1/3 cup of flour.
- It's 1/2 tsp of ground cinnamon.
- You need 1 1/2 tbsp of cold butter.
- Prepare 1 box of Pillsbury refrigerated pie crust (or homemade!).
Turn cooled filling into pie shell. Lay the remaining pie crust on a sheet of wax paper. Arrange in a criss-cross pattern on top of blueberries, pressing ends into the edges of the bottom crust and crimping to seal. - Preheat oven to 425°.
- Add lemon juice to blueberries and toss to coat. If using frozen blueberries, thaw completely first..
- In separate bowl add sugar, flour and cinnamon. Stir until well combined..
- Add dry ingredients to blueberries and stir until well combined..
- Lay 1 crust into pie plate. Fill with blueberry mixture. Dot with butter..
- Add top crust. Fold edge of top crust under bottom crust and press to seal. Cut vents in top for steam to escape..
- Bake at 425° for 15 minutes. Reduce oven temperature to 375° and bake for an additional 25-30 minutes..
- NOTE: About half way through baking, you may want to cover edges with foil to prevent from overbrowning..
- RECOMMEND: Bake pie on cookie sheet in case pie bubbles over. Be careful pie doesn't slide off when removing from oven!.
