Be sure to use certified gluten free rolled oats. For healthy banana bread muffins, use a muffin tin like this one, and place paper liners in the wells. Pour the prepared batter into the paper liners. It's incredibly moist and gooey on the inside while being tender on the outside!

  1. In medium sized mug, mash the banana very well.
  2. Stir in the peanut butter with a fork.
  3. Stir in the milk.
  4. Add the oat flour, baking powder, and salt.
  5. Briefly mix the dry ingredients together with a fork to disperse the salt snd baking powder.
  6. Fold the mixture until a thick flowing batter forms.
  7. Stir in the raisins or chocolate chips.
  8. Top the bread with blueberries or more chocolate chips or raisins.
  9. Microwave for 1 minute and 30-40 seconds in a 1200 watts microwave or until the center of the bread is no longer wet and tacky.
